The parsley is also rich in polyphenolic antioxidants like apiin, apigenin, luteolin, and chrysoeriol that are some of the most powerful ingredients that can be found in a plant, and that have antioxidant properties.
This plant is also rich in potassium, manganese, iron and magnesium. In 100 grams of fresh parsley there are 554 milligrams, that is 12 % of the necessary dosage of potassium. It is also rich in vitamin A, beta-Carotene, vitamin K and folates. The zeaxanthin helps with macular degeneration which afflicts older people.
The parsley is most probably richer in vitamin K than any other plants, which plays an important role in the bones health by slowing down the osteotropic bone activity. It also plays an important role with patients with Alzheimer’s, by limiting the nerves damage.
The parsley’s leaves as well as the stem and the roots have antiseptic and carminative properties. The eugenol reduces the blood sugar levels in people with diabetes. However, further researcher should be done to prove these positive properties.
Parsley in an extracted form is a potent diuretic.
