Pudding with Coconut and Brown Rice

Servings: 8

Preparation time: around 5 minutes

Cook time: around 3 hours and 35 minutes (for a slower cooker)

Ingredients:

  • Coconut milk- 1 can (light)
  • Brown rice- 1 cup
  • Maple syrup-(2 tablespoons)
  • Water-2 cups
  • Vanilla- 1 teaspoon
  • Cinnamon-2 teaspoons
  • Raisins- ½ cup

Instructions:

  1. Put the brown rice, coconut milk, vanilla, syrup and water in the cooker and leave it cook on low heat for approximately three and a half hours.
  2. Add the raisins and the cinnamon.
  3. Enjoy your pudding!
